- 1 Head of Cabbage
- 1/2 Red Onion
- 2-3 Cloves of Garlic
- 8 oz Feta
- 1 & 1/2 C Pecans
- 2 C Garbanzo Beans
- 2 Tablespoons Olive oil
- 4 Tablespoons Rice Vinegar
- 2 Tablespoons Mirin
- 1 &1/2 Tablespoons Dill
- 1 Teaspoon Salt
- 1 Teaspoon Pepper
Finely chop the cabbage, red onion, garlic, and pecans. Crumble up the Feta and add in your Garbanzo Beans. Add the wet ingredients (Olive oil, Rice vinegar, Mirin) then add the spices (Dill, Salt and Pepper) Mix (It doesn’t need to be with your hands:)) Enjoy!! I think this salad will stay in your fridge 2-3 days and still be good. All of our kids enjoy this salad and it never really lasts more than a day! Ha!
